Both whiskies come roaring in with big flavours and high ABV, but it’s Billy Walker’s genius blending at GlenAllachie that steals the show for me. While Tomatin opens sweet with vanilla and toffee before turning peppery and hot, the GlenAllachie transforms over time—moving from a bold, boozy punch to beautifully integrated layers of leathered fruit, prune, cocoa, and espresso. I dive into how GlenAllachie’s complex mix of ex-Oloroso, ex-PX sherry, ex-Rioja, and virgin oak casks creates a deeper, more cohesive dram than Tomatin’s spicier expression.
