"Soba-kiri Ishigaki" was the first store to open in Chubu area at "Daruma Ichimon" with Mr. Kunihiro Takahashi, who is said to be the "god of buckwheat noodles" at the top. The owner, Yusuke Ishigaki, fell in love with the "chic" of soba culture that has continued since Edo and decided to practice. After studying at the famous Michelin 1-star restaurant "Naniwa Okina" at Daruma Ichimon, the restaurant, Mr. Sadaaki Nakaue, the chef of Sosuikyo, is a restaurant in Aqua Ignis, a comprehensive food resort in Komono Town, Mie Prefecture. In response to this, they opened a store in a corner of the newly developed "Yunoyama Sosuikyo". The soba that Mr. Ishigaki fell in love with was the simplicity of having a dish, sake, and finally the soba. In a bright and open space, you can enjoy authentic soba, sake, and several types of dishes that Mr. Ishigaki has been aiming for. The soba he offer is Nihachi soba, which you can enjoy over the throat, using carefully selected ingredients in Japan approved by Daruma Ichimon. In the store, we remove dust and stones mixed with buckwheat, peel and crack, align the grains, and use fresh buckwheat flour milled with a stone mill to carefully finish each flavorful buckwheat. Because soba is simple, it is a Japanese food that makes the creator's feelings stand out even more. Mr. Ishigaki has experienced several restaurants so far, but he says that he never gets tired of making soba noodles, and he smiles at the difficult things of making soba noodles, "It's about getting up early in the morning." The quest for endless buckwheat will deepen from daily buckwheat noodles and will continue to make many throats.
