Mix the egg, ricotta cheese, wheat flour, and potato or cassava starch into the mashed potatoes. Season with salt and oregano to taste. Knead with your hands. If necessary, add more wheat flour to achieve the right consistency. It will be ready when it no longer sticks to your hands. Let the dough rest in the refrigerator for 2 hours. After removing the dough from the refrigerator, cut it into cubes and roll it out into strips. Cut to the desired size and cook in boiling water. As soon as the dumplings rise to the surface, remove the dough from the water and set aside. To finish, simply melt the butter in a frying pan and sauté the Kluski. Serve hot with chopped chives!
