Thanks for stopping by my kitchen! Maids of honour are individual pastry tarts filled with jam and sponge cake, dusted with a sprinkling of icing sugar they are a delicious afternoon treat. They are an old English recipe and it is said they date back to Henry VIII. Traditionally they are filled with raspberry jam but fill them with your favourite jam, as I have, and enjoy. Although they are not really a pudding, they are also great served warm with custard. ~~ Ingredients ~~ For the pastry: • 175g/6oz plain flour • 75g/3oz butter (cold) For the filling: • 2 tablespoons jam (traditionally raspberry) • 50g/2oz butter (room temperature) • 50g/2oz caster sugar • 1 egg • 50g/2oz self raising flour • Icing sugar for dusting ~~ Links ~~ Instagram: / sheilaskitchenx
