Slice the onion lengthwise and chop the green bell pepper into medium-sized pieces, as shown in the video. Heat the olive oil in a pan, then add the onion and green bell pepper and sauté until softened. Add the tomatoes and cook until they soften completely. Add the chicken thighs and season with: Sweet red pepper, black pepper, salt, cumin, and coriander. Cook until the chicken is fully cooked. Serve hot with rice or bread.
