Fruit Hot X Buns In order 1.5 cups of warm water or milk 5Tbspn brown sugar 3 tsp of yeast add the top three ingredients and let the yeast bloom until bubbly then add 1 egg 50gm soft butter into chunks Add 4.5 cups of flour 5 Tbsp milk powder if using water 1 tsp salt 2 tsp of mixed spice 1 tsp cinnamon 1 cup of sultanas or raisins Mix with a mixer or by hand, when the dough forms around the dough hook, continue for another 1 minute. Cover and leave to double in size for roughly 45 minutes to an hour Once doubled in size, cut the dough into 16 equal sizes making sure they are roughly the same size. Roll the dough balls into a bun shape and leave to double in size again, roughly 15-20 mins. Pipe crosses on top Pre-heat oven fan-bake 180c or bake 200c Bake for 12-15 mins Brush sugar syrup once they come out of the oven Paste for the crosses add 1/4 c flour and add enough water to form a paste. It should be roughly paint thickness. Pipe onto buns once they have risen enough before going into the oven. Sugar syrup 3 TBsp sugar 1/4 c boiling water Chocolate Hot X Buns Same recipe as above but omit the sultanas and add 2 Heaped Tbsp of cocoa powder and 1 cup of chocolate chips.
