This recipe is mentioned in books those were written in 15th century!! These turn out nice and crispy. It has nice sweet filling of coconut. Mande is an authentic, traditional Maharashtrian recipe. This can be a good replacement for Karanji. These just melt in mouth. These taste just awesome. This is Konkan special recipe also known as Madage or Chavade. You can call this open karanji. These are crispy and light!! Try this recipe at home and write to me. You also can like, share and subscribe. Ingredients: • 2 cup / 300 gm Maida • 1/4 tsp Salt • 1/4 cup / 60 ml Oil • 125 ml Water • 2 tbsp / 18 gm white Sesame seeds • 2 tbsp / 60 gm chopped dry Nuts (cashew nuts & Almonds) • 1 cup / 80 gm grated dry Coconut • Cardamom powder • 2 cup / 260 powdered Sugar • Oil for frying Method: • Mix maida, salt and oil well together until the mixture turns nice and crumbly. • Add a little water at a time and knead semisoft dough. • Cover and rest the dough for about 15 minutes. • Heat up a pan on medium heat and add sesame seeds, dry nuts. • Roast it well together until it gets nice golden color and turn off the gas. • Add dry coconut and mix well. • Let the mixture cool down. • Mix powdered sugar, roasted mixture and cardamom powder well together in a bowl and stuffing is ready. • Knead the dough well once and take out small portion from it. • Make it smooth and even and roll out thin puri from it. • Prick the puri with the help of fork. • Heat up oil on medium heat in a pan and drop puri into it. • Fry it well from both sides. • Take the puri out, drain excess oil and transfer it on a tissue paper. • Spread stuffing at the center of it and fold the puri into half. • Again spread a little stuffing on it and fold it into quarter. Mande are ready. • You can make 30 mande from the ingredients used. They weigh a little more than 800 gm.
