Walking from Mousehole to Penzance along the South West Coast Path
Hello Friends, Here is the first walk of the holiday, from Mousehole to Penzance. Surprisingly the weather was wet and windy on this day, but it was a lovely walk along the south west coast path. I refer to a recipe of a fruit cake without any refined sugar added and here it is: Ingredients: 450g of mixed dried fruit 120g of glace cherries 120g of crystalised ginger 100ml of brandy or sherry or orange juice 160ml of soya milk 100ml of rapeseed oil 1 tablespoon of black treacle 230g of plain white flour 2 teaspoons of baking powder 30g of ground almonds rind of 1 lemon pinch of allspice Method: 1. heat oven to 150C/ 130C fan/ 300 F/ gas 2 2. grease and line a small tin, 1lb loaf or 6” round 2. mix all dry ingredients together 3. mix all wet ingredients together 4. gradually add the wet ingredients to the dry and stir thoroughly 5. pour ingredients into tin 6. bake for 1 hour, then reduce to 130C/ 110 C fan/ 250F/ gas 1 and bake for a further 1.5 hours 7. it is cooked when a skewer comes out clean 8. cool in tin 9. tip out and slice when cold. At the end of the walk we stayed in an air b and b in St Buryan and it was absolutely wonderful. St Buryan was a lovely place in itself with a shop selling everything, including vegan goodies like tofu, beans and veg; and a cafe next door to the shop selling vegan cake. The Church was very interesting and apparently there is a stone circle nearby as well, although we didn’t get to visit the stone circle.
