It's Golden Week! The transportation bureau and the police traffic control department are closed, so I should be able to rest for a while. Therefore, I'm participating in a collaboration. This time the theme is "Local Food of the World." Honestly, I feel like I could claim everything we make is local food. This is a classic soup eaten throughout China, not just in Henan Province, but in various forms. It's especially common in the north. Since this time the theme is local food, I'll introduce this Hu La Tang (spicy soup) prepared in a local way. [Ingredients (5-6 servings in Japan, 3 servings in China)] Soup Base Beef bones (femur bones used this time) 500g Water 2L Green onion 1/2 Ginger about 30g Dried Ingredients Wood ear mushrooms about 5 Peanuts a handful Seaweed bamboo shoot 1 Vermicelli a handful Noodles All-purpose flour 200g Water 100cc ↓ Water 400cc Spices Sichuan peppercorn powder 1 heaping teaspoon Green Sichuan peppercorn powder: slightly less than 1 teaspoon Black pepper powder: 1 heaping teaspoon White pepper powder: 1 teaspoon Five-spice powder: 1 teaspoon to 1 tablespoon Seasoning Ginger: 20g Green onion: 1/2 Soy sauce: 2 tablespoons Dark soy sauce: 1 tablespoon Salt: 1 teaspoon to 1 tablespoon MSG: 1/2 teaspoon Optional: Cilantro, daylily buds, dried herbs, duck blood, etc. [Instructions] If using unprocessed beef bones, soak them in water overnight to remove the blood. (This step is omitted this time.) Add beef bones, ginger, green onion, and 2 liters of water to a pressure cooker and cook under pressure for about 1 hour. Rehydrate any dried ingredients in water. Add water to the all-purpose flour and knead until it forms a ball. Let it rest for 10 minutes, then knead again. Once the surface is smooth, cover with a lid or plastic wrap to prevent drying and let it rest for about 30 minutes. Combine the spices. Grinding the Sichuan peppercorns, green peppercorns, and black peppers just before serving will enhance the flavor. Cut the rehydrated dried ingredients. Generally, cut them into thin strips. Finely chop the ginger and green onions. Add 400cc of water to the dough made from all-purpose flour and gently knead the dough in the water for 5 to 10 minutes. Squeeze out the excess water from the separated gluten and set aside. Once the pressure cooker has released naturally, remove the beef bones, ginger, and green onions. If there is any meat attached to the beef bones, separate it and set it aside. Heat oil in a wok and sauté the minced ginger and green onions. Once fragrant, add the soup and bring to a boil. When the soup is boiling, add the soy sauce, dark soy sauce, and salt and mix well. Add the other ingredients and simmer until the peanuts are cooked through. Add the gluten mass, tearing it into thin pieces as you roll it out. Season with salt and MSG. Once it comes to a boil, gradually add the water containing the dissolved wheat starch while stirring in one direction until thickened. It's ready when the mixture has thickened completely. Garnish with cilantro if desired. *You can also add vinegar or chili oil to taste. *Adding it to instant noodles is the local way to eat it.
