Ingredients List For the Dough: 4 cups flour 1.5 cups lukewarm water 1 teaspoon salt 1 teaspoon granulated sugar 1 teaspoon dry yeast FILLING INGREDIENTS 1 tablespoon tomato paste or red pepper paste, one large tomato puree, chili flakes, paprika, thyme, salt, four tablespoons olive oil (mix and use as a sauce to brush the dough) Filling to be added to the dough: Olives, cheddar cheese, sausage or pastrami 200 gr butter, melt and let cool PREPARATION Kneading and Resting the Dough Transfer the flour to a large bowl and make a well in the center. Mix the lukewarm water, yeast, and sugar and pour into the well in the center of the flour. Sprinkle the salt around the edges of the flour. Knead a soft dough that doesn't stick to your hands. Cover the dough and let it rest at room temperature for about 30 minutes. Divide the rested dough into two equal portions, cover again, and let it rest for another 15 minutes. Flour the top and bottom of the rested dough and roll it out as thin as you can. Brush melted and cooled butter all over it. Fold it into an envelope shape, brushing butter between each fold. After shaping it like an envelope as shown in the video, refrigerate for half an hour. This will allow the butter inside to solidify. After thirty minutes, remove the dough from the refrigerator. Flour the top and bottom and roll it out thoroughly to form a square shape. First, pour the sauce, then add the filling, spreading it evenly. Roll the dough up. Cut the roll into three-finger-thick slices and shape them as shown in the video, then arrange them on a baking tray. Brush with butter and bake in a preheated 180-degree fan oven until golden brown.
