Jhinge Aloo Postu Ki Swadisht Recipe | स्वादिष्ट झिंगे आलू पोस्टु रेसिपी Ingredients | सामग्री Ridge gourd (Jhinge) – 300 g | झिंगा (तुरई) – 300 ग्राम Diced potatoes – 4 | कटे हुए आलू – 4 Panch phoron – ½ tbsp | पंच फोरन – ½ बड़ा चम्मच Dry red chillies – 2 | सूखी लाल मिर्च – 2 Salt – as per taste | नमक – स्वादानुसार Turmeric powder – ½ tbsp | हल्दी पाउडर – ½ बड़ा चम्मच Kashmiri red chilli powder – ½ tbsp | कश्मीरी लाल मिर्च पाउडर – ½ बड़ा चम्मच Poppy seeds (Posto) – 2 tbsp | खसखस (पोस्तो) – 2 बड़े चम्मच Green chillies – 5 | हरी मिर्च – 5 Ginger – ½ inch | अदरक – ½ इंच Method | विधि 1. Soak poppy seeds in warm water for 15–20 minutes and grind with green chillies and ginger into a smooth paste. खसखस को 15–20 मिनट गुनगुने पानी में भिगोकर हरी मिर्च और अदरक के साथ पीसकर मुलायम पेस्ट बना लें। 2. Heat 2–3 tbsp oil in a pan and add dry red chillies and panch phoron. एक पैन में 2–3 बड़े चम्मच तेल गरम करें और सूखी लाल मिर्च व पंच फोरन डालें। 3. Add diced potatoes and sauté for 3–4 minutes. कटे हुए आलू डालकर 3–4 मिनट तक भूनें। 4. Add turmeric powder and Kashmiri red chilli powder. हल्दी पाउडर और कश्मीरी लाल मिर्च पाउडर डालें। 5. Add ridge gourd and salt, mix well and cook covered. झिंगा (तुरई) और नमक डालकर अच्छी तरह मिलाएं और ढककर पकाएं। 6. When potatoes are nearly cooked, add the posto paste and mix well. जब आलू लगभग पक जाएं, तब पोस्तो का पेस्ट डालकर अच्छी तरह मिलाएं। 7. Cook for another 5–7 minutes until thick and flavorful. 5–7 मिनट और पकाएं जब तक सब्जी गाढ़ी और स्वादिष्ट न हो जाए। Serve hot with rice | गरमा-गरम चावल के साथ परोसें। 🍛
