The Farming Chefs visit and COOK at Terramay

After a wild few months post wildfire of cleaning, planning and getting back on track, we had an amazing adventure during our collab with Terramay. We stepped back into a professional kitchen for one special night at Terramay cooking a 5-course farm-to-table-menu for a full restaurant. It felt amazing to bring our farm-to-table philosophy into a restaurant setting again, cooking with their regeneratively grown, seasonal ingredients. It was an ambitious event filled with laughter, and a lot of heart at a location that embodies all we stand for! One of the stars of the evening was a dish close to our hearts: pork neck braised in herbs. It’s rich, succulent, and full of the deep, comforting flavors that only slow cooking can bring. Recipe: Herb-Braised Pork Neck Ingredients (serves 6): 1.2 kg (2.6 lbs) pork neck, cut into large chunks 8 tablespoons olive oil 4 garlic cloves, smashed 1,5 tbsp coriander seed, 1,5 tbsp fennel seed, 2 celery stalks, diced 500 ml (2 cups) good-quality stock (beef or pig) 2 bay leaves generous amount of fresh herbs: sprigs of rosemary, thyme, and marjoram Salt & freshly ground black pepper Instructions: Heat the olive oil in a heavy pot or Dutch oven. Brown the pork neck piece on all sides until golden. Remove and set aside. Pound all herbs and dried spices together. Rub the meat with the spice mix and cover it with the foil. Return the pork to the pot and put in the oven for 3,5 hours at 140 degrees Celsius/ 280 Fahrenheit, until the pork is meltingly tender. Take out of oven, and let it cool down. Slice it when it is cold and reheat it in the beef stock before serving. Serve with creamy mashed potatoes, and roasted veggies. This dish is the definition of elevated comfort food—simple ingredients, slow time, and care in every step.
