What You'll Need: -1 cup apple cider -1/2 cup unsalted butter, melted -3/4 cup brown sugar, packed -1/4 cup white sugar -2 large eggs -1 teaspoon vanilla extract -1/2 cup sour cream -1 1/2 cups flour -1 1/2 teaspoons baking powder -1/4 teaspoon salt -1 teaspoon pumpkin pie spice (I used 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, and 1/4 teaspoon ginger) -2 teaspoons ground cinnamon Topping: -1/4 cup granulated sugar -1/2 teaspoon ground cinnamon What You'll Do: 1. In a small/medium saucepan over medium heat, bring the apple cider to a simmer, stirring occasionally, and reduce it by half (this will take about 10 minutes). Once done, set aside to cool. 2. In a large mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth. Add the eggs, one at a time, mixing well after each addition. Then, stir in the vanilla extract, sour cream, and reduced apple cider fritter recipe. 3. In a medium bowl, whisk together the flour, baking powder, salt, pumpkin pie spice, and 2 teaspoons of cinnamon. Slowly fold the dry ingredients into the wet ingredients until just combined 4. Pour the batter into a greased and lined 9×5 loaf pan (or a muffin tin) 5. In a small bowl, mix 1/4 cup of granulated sugar with 1/2 teaspoon of cinnamon. Sprinkle this mixture generously over the top of the batter before baking. 6. If making bread, bake at 350°F (175°C) for 45-55 minutes or until a toothpick inserted into the center comes out clean. For muffins, bake for 20-25 minutes.
