Achari Arbi – Full Ingredients For Dry Roasting (coarsely grind) 1 tsp coriander seeds 1 tsp cumin seeds 1 tsp fennel seeds 1 tsp mustard seeds (rai) 1 tsp black peppercorns 1 tsp kalonji (nigella seeds) ½ tsp carom seeds (ajwain) ½ tsp fenugreek seeds (methi dana) 3–4 dry red chilies For Cooking Mustard oil 1 tsp carom seeds (ajwain) 1 tsp kalonji (nigella seeds) ½ tsp hing (asafoetida) 1 inch chopped ginger 2 chopped green chilies 400 g boiled arbi (taro/colocasia) 1 tsp turmeric powder 1 tsp red chili powder 2 tbsp achari masala (ground roasted spice mix) 1 tsp amchur powder ½ tsp black salt Salt to taste Fresh coriander leaves Method (Short) Dry roast all whole spices and red chilies. Coarsely grind them. Heat mustard oil in a pan. Add ajwain, kalonji, and hing. Add ginger and green chilies. Add boiled arbi and cook for 1–2 minutes. Add turmeric, red chili powder, achari masala, amchur, black salt, and salt. Mix well and cook for 2 minutes. Add fresh coriander and serve hot. 😊
