Ingredients: 3 cups of rice (washed only, no soaking) 1 whole chicken, washed and soaked in a little water, vinegar, and lemon juice 3 large onions, chopped 1/3 cup of vegetable oil 1 teaspoon of black pepper 1 teaspoon of curry powder 1/2 teaspoon of dried chili pepper 2 tablespoons of salt 1 cinnamon stick 2 dried lemons 1 green chili pepper 6 cups of water for each cup of rice (2 cups of water) Directions: 1. Sauté the onions: First, dry the onions well, then sauté them in a saucepan over medium heat without oil until completely dry. Once they dry, add a third of a cup of oil and sauté the onions until they turn golden brown. Then, reduce the heat to low (almost off) and continue sautéing the onions until they turn black without burning. This process takes about an hour. 2. Brown the chicken: Add the chicken to the black onions and stir well until browned. 3. Add the water and spices: Add the specified amount of water with all the spices mentioned, and stir well. Cover the pot and leave the ingredients on medium heat for 15 minutes after boiling. 4. Prepare the rice: Meanwhile, wash the rice well (do not soak it). After the chicken is cooked, remove it from the broth, brush it with oil, and place it in the oven (this step is optional but enhances the flavor). 5. Cook the rice: Add the rice to the chicken broth, bring to a boil, then reduce the heat and cook for 20 minutes until cooked. 6. Serve: Serve the rice in a serving dish and top with the browned chicken. It's best to serve the dish with white cheese sauce or red pepper sauce. --- White Sauce Ingredients: A piece of salty cheese One or more garlic cloves One green chili pepper Mint leaves A quarter cup of water Preparation Instructions: Blend all ingredients in a blender until smooth. Red Sauce Ingredients: One or more tomatoes Garlic cloves Dried chili peppers Salt to taste Thyme (if using) Preparation Instructions: Blend ingredients in a blender until smooth.
