Cooking for My Large Family So They Don’t Have To ❤️ | Weekly Meal Prep Routine
Week 2 of my weekly meal prep for my married kids and my single kiddos 💛 I’m really enjoying doing this for my family. Since I’m not used to cooking for just a couple people anymore, I figured I’d start helping out my other kids too. They all work such long hours, so now they can just swing by, grab dinner, and head home with a homemade meal. This week’s menu: 🍝 Million Dollar Spaghetti Casserole 🥖 Homemade French Bread 🍓 Homemade Strawberry Shortbread 🍝 Million Dollar Spaghetti Casserole Ingredients: • 2 lbs ground beef • 1 chopped onion • 1 tbsp garlic • 1 tsp black pepper • 1 tsp salt • 1 jar spaghetti sauce • 1 can tomato paste • 2 tbsp Italian seasoning • 1 block cream cheese • 1 cup sour cream • 1 container ricotta cheese • 1 tbsp parsley • 1 large egg • 2 cups Italian cheese • 1 box cooked spaghetti noodles Directions: Cook beef, onion, garlic, salt, and pepper until beef is fully cooked. Add spaghetti sauce, tomato paste, and Italian seasoning. Set aside. In another bowl combine cream cheese, sour cream, ricotta cheese, parsley, egg, and Italian cheese. Mix cooked noodles into meat mixture, then fold in cheese mixture. Pour into baking dish and bake at 375° for about 20 minutes. Top with Parmesan cheese before serving. 🥖 Homemade French Bread Ingredients: • 1½ cups warm water • 2¼ tsp yeast • 1 tbsp sugar • 4 cups flour • 2 tsp salt • 2 tbsp olive oil Directions: Combine warm water, yeast, and sugar. Let proof for 10 minutes. Add flour, salt, and olive oil. Mix until dough pulls away from bowl. Place in greased bowl, cover, and let rise 30 minutes. Divide dough into 2–3 sections and shape into long loaves. Place on baking sheet, cover, and let rise another 30 minutes. Bake at 375° for about 30 minutes. Brush with butter and sprinkle with garlic salt. 🍓 Homemade Strawberry Shortbread Ingredients: • ⅓ cup sugar • 1 cup + 1 tbsp flour • 3 tbsp cornstarch • 1¼ tsp baking powder • ⅛ tsp baking soda • ¼ tsp salt • ½ cup softened butter • 1 large egg + 1 egg yolk • ½ cup sour cream • ½ cup whole milk • 1 tsp vanilla • 1 lb strawberries • 1 tsp sugar • Cool Whip Directions: Mix sugar, flour, cornstarch, baking powder, baking soda, and salt. Add butter, egg, egg yolk, sour cream, milk, and vanilla. Mix well. Pour into greased loaf pans and bake at 375° for about 45 minutes or until knife comes out clean. Mix chopped strawberries with sugar (and cinnamon if desired) and let sit to create juices. Once shortbread cools, slice and top with strawberries and Cool Whip.
