Chives (Allium schoenoprasum) are in the same family as garlic, onions, and leeks. They're cultivated for their leaves, which are long, hollow, like straws, and have a mild garlic flavor. The best-known species is the one with the thickest leaves, about the thickness of a pencil. This brings up the first question for those growing chives: leaf thickness. Ciboulette is a very thin variety of chive, also called French chives. If you're growing chives from seed, take a good look at the packaging to determine the exact variety. It's good to know that, regardless of the type, chives have thin leaves at the beginning of their life, while chives stop growing thicker after a while. If you bought seedlings or an unmarked pot with the chives already planted, it's a little harder to tell, but go by the thickness: thin, it's chives. Here's a great tip for those who have newly purchased chives in pots: remove the soil clod and separate the plant into small clumps to replant them, with more space, just like our gardening teacher does in the video. Oh, and choose a spot that gets plenty of sun. The plant will have more room to grow and the leaves won't turn yellow. Sagging chives with wilted leaves are a sign of low calcium in the soil. Use a supplement like Forth Equilíbrio liquid calcium (link below). This nutrient provides the necessary rigidity for strong leaves, ensuring that crispy texture when you eat your chives. Harvesting is quite easy: take a pair of scissors and cut off as many leaves as you want, keeping at least 3 centimeters of the plant's stem. At the base, you'll notice that the chives form a kind of straw on their main stem, from which new leaves will sprout after being cut. It couldn't be easier. By keeping these main stems, you'll have several harvests before needing to sow or plant new chive seedlings.
