Harvesting earth mushrooms after a night of gentle rain in the forest. Harvesting these wild mushrooms must be done early because they only appear for a short time after the rain. Harvesting basket after basket, I carefully searched the damp ground before taking the fresh mushrooms to the local market. The earth mushrooms were tender, naturally fragrant, and slightly chewy. I kept some to cook at home, where they tasted sweet, earthy, and even more delicious in a simple stir-fry with fresh herbs. The rest were packed carefully and sold at the market while they were still fresh.
