The Cuchillo Canario is one of the most distinctive traditional knives of Spain's Canary Islands. For generations, these knives were carried by farmers, shepherds, and craftsmen as practical tools for everyday work. In this video, I forge a traditional Cuchillo Canario from high-carbon steel, perform a differential heat treatment, and create several handle variations using wood, cow horn, and metal inlays inspired by historical examples.
