Chianti tuna is not a tuna-based dish! Although it looks very similar, it's made with pork loin. What's true about this recipe, however, is that it's made in Tuscany, specifically in the Chianti region. It's typically served as an appetizer, and you can make a large supply given the lengthy preparation time, but making Chianti tuna is incredibly simple. It's a good idea to make it in large quantities so you always have a jar on hand! In addition to the pork loin mentioned above, you'll need a few other ingredients to make this preserve, but aromatic herbs and spices are essential. Bay leaves, sage, juniper berries, and pepper give the meat a decidedly intense and special aroma and flavor. Making Chianti tuna, as I mentioned, is not difficult at all. The pork loin is first cut into small pieces and then left to rest in the refrigerator with a special salting process that dries it out slightly. After the required time, the morsels are cooked in a special broth and, once cooled, are placed in special jars and preserved in oil. A true delight that will save many of your dinners! ► Ingredients for Chianti Tuna: 900g Pork Loin For the Salting 100g Coarse Salt 3 Sprigs of Rosemary 2 Bay Leaves 1 Sprig of Sage 1 Clove of Garlic 1 Tsp. Juniper Berries 1 Tsp. Peppercorns For the Cooking Broth 1.5L Water 1.5L White Wine 1 Onion 1 Celery 1 Carrots 2 Bay Leaves 2 Sprigs of Rosemary 1 Sprig of Sage 2 Cloves of Garlic 1 Tsp. Juniper Berries 1 Tsp.
