The weather still doesn't allow for normal hive work – it's cool, cloudy, and the bees haven't fully "started" yet. So instead of working in the apiary… I'm starting something I've been thinking about for a long time – making Trójniak mead 🍯 I'm using leftover honey from last year for fermentation. This honey is unique because it was made with nettle and lemon. The nettle gives it an interesting character and a darker color – likely due to the natural minerals (including iron and other trace elements) that affect the color and profile of the honey.
