Episode #50 Recipe: PUMPKIN FRITTERS 2 CUPS PUMPKIN (PEELED, WASH AND COOKED SOFT) 2 EGGS 2 TSPNS VANILLA EXTRACT 1/3 CUP OF (WARM) EVAPORATED MILK 3 - 4 TBSPNS BROWN SUGAR PINCH OF SALT 2 CUPS SELF RISING FLOUR 1/2 TSPN SPICE OR TO TASTE) 1/2 TSPN CINNAMON (OR TO TASTE) POWDERED SUGAR (FOR GARNISH) OPTIONAL DIRECTIONS PREP PUMPKIN PEEL, CUT IN SMALL PIECES, AND WASH; COVER WITH WATER IN A MEDIUM SIZE POT AND COOK UNTIL SOFT AND TENDEN. WHEN DONE DRAIN WELL AND TRANSFER TO A MIXING BOWL AND MASH THE PUMPKIN WITH A FORK. BEAT THE EGGS WITH A WHISK THEN ADD ALL OTHER INGREDIENTS AND MIX TO WELL COMBINE SPOON DROP INTO PREPARED OIL ON LOW MEDIUM HEAT AND COOK UNTIL GOLDEN BROWN ON BOTH SIDES. SPRINKLE WITH A LITTLE POWDERED SUGAR AND SERVE.
