Adobong Baka
Ingredients: 1kg pork brisket 1 medium onion 1 tbsp peppercorns 1 whole garlic 1/4 cup dark soy sauce 2 tablespoons vinegar 1 teaspoon thyme (optional) Salt and pepper to taste 2 tablespoons of butter 1. Boil the beef with the onion and peppercorns with enough water to cover for 30 minutes 2. Strain beef and keep broth. Discard the onions and peppercorn 3. In a saucepan, saute garlic and slightly sear beef. 4. Put soy sauce and stir fry until beef turns brown 5. Put broth in the saucepan together with the thyme and simmer till beef is soft and tender 6. Drain excess fat then put vinegar in and simmer for 2 minutes 7. Season with salt and pepper. Put butter in stir until it melts
