Daebyeon Port in Gijang, Busan, used to be bustling with anchovy fishing boats in the spring. However, as soon as the cold winds begin to blow, boats depart the harbor at dawn to head out to sea to catch anglerfish. This is because the anglerfish, a fish once looked down upon—discarded as soon as caught or given as a freebie with other purchases—has now become a food ingredient enjoyed by many. Captain Kim Jin-ho, who is celebrating his 35th year as a fisherman this year, has also been focusing on anglerfish fishing for the past decade or so. Anglerfish fishing, which begins before sunrise, utilizes the "gill net" method, where nets are installed vertically in the paths where fish travel, allowing fish to get caught in the mesh. During the casting operation, which involves lowering the net along with buoys, one cannot let their guard down for even a moment due to the net descending at high speed. Once the net casting is finished, chilled water is filled into the fish hold to preserve the anglerfish, which inhabit deep waters, alive for transport to land. Three to four hours after the net is set, the hauling operation begins. Anglerfish caught in the net must be removed one by one by hand, and care must be taken to avoid being bitten. Injuries during fishing operations frequently occur because anglerfish have sharp teeth and a habit of swallowing anything in one bite. Although the work of lowering and hauling nets continues all day long starting in the early dawn, Captain Kim Jin-ho is simply delighted and grateful to see the anglerfish coming up caught in the nets as the cold wind begins to blow. When you think of anglerfish, the place that comes to mind is Masan. At one time, Masan Port was a harbor where many fishing boats came and went, offering a variety of seafood. Although its scale has shrunk and it is now difficult to find anglerfish fishing boats in Masan, Masan remains a region that cannot be left out when talking about anglerfish. Mrs. Kim Ok-soon, 80 years old this year, specializes in selling only anglerfish at a fish market near Masan Port. She has raised her children by cleaning anglerfish for over 50 years, and her three sons are also engaged in the work of cleaning and selling anglerfish. Unlike other regions, Masan prepares dried anglerfish as a stew; the consumption of anglerfish as food began when people started making stews by adding dried anglerfish to broth infused with soybean paste. Following in the footsteps of the mother-in-law, the daughter-in-law continues to prepare dishes using dried anglerfish, and the family is now running a restaurant serving Masan-style braised anglerfish for the third generation. Once a fish looked down upon and discarded, the anglerfish has now become a grateful and precious guest of the sea, serving as a comforting food for some and a livelihood for others.
