今夜は新潟県上越市にある家系ラーメン総本山吉村家の直系店『上越家』にお邪魔してきました！以前も伺わせて頂いたことがありましたが、今回久しぶりに北陸にツアーでやってきたタイミングで濃厚でパンチの効いたあの味わいが忘れられず3人で伺いました！「吉村家」といえばこれまでロイドごはんでも何度もご紹介している家系ラーメン発祥のお店です。ご存知の方も多いと思いますが、家系ラーメンを生み出し現在のラーメン界の最後のレジェンドとも言われる吉村実氏が拓いたことで知られています。こちらで修行し吉村氏が認めた直系店は「吉村家」を含めると全国でもわずかに8店舗しかありません。博多の豚骨スープに関東の支那そばの発想を足し、鶏油で調節することで曰くこの“家系ラーメン”にしかない独特のパンチとコクある味が生み出されますが、その長年培われてきた豚骨を扱う職人技、直系店のプライドと名を背負った豚骨ラーメン1杯はまさに至極の味わい。今回は特別許可を得て、実際に作るところから見せて頂くことができました！頂くのを楽しみに、まずはその職人技をどうぞご覧下さい！ Tonight, We have visited the “Joetsuya”, a direct shop of the Yoshimuraya, a Iekeiramen in Joetsu City, Niigata Prefecture!
