Pour the sifted flour into the dough mixer and turn on the machine. 2. First add a little cooking oil, then slowly add the water. 3. Let the machine knead the dough for a few minutes, then remove the dough and let it rest. 4. Chop the onion/shallot and bacon into small pieces. 5. Heat a little cooking oil in a pan, sauté the onion/shallot and bacon separately. 6. Season with salt and pepper, mix everything together, and sauté for a few minutes. 7. Divide the dough in half, sprinkle flour on the work surface and the dough, and roll out the dough until wide and flat. 8. Spread crème fraîche on the dough and sprinkle with pieces of onion and bacon. 9. Chop the leek and sprinkle it on the tarte flambée. 10. Place the tarte flambée in the oven and bake until nicely crispy. 11. Chop fresh chives and garnish the tarte flambée with them. 12.
