Hi all lab friends... In this video we will discuss the Lipid practicum. What are Lipids? Lipids are organic compounds that are insoluble in water but can be extracted with non-polar solvents such as chloroform, ether and benzene. Chemically, lipids are fatty acid esters that are found in nature in both plant and animal forms. Fatty acids are building compounds of various lipids found in animals and plants. Saturated chain fatty acids that contain 1 to 8 carbon atoms are liquid while more than 8 carbon atoms are solid. Oil or fat cannot dissolve in water, but can form a stable emulsion when there are other substances that function as emulsifiers. Glycerol in free form or found in oil/fat when dehydrated will form an acrylate aldehyde called acrolein. Fat/oil can form a translucent stain so that writing paper that is not transparent becomes semi-transparent.
