Spicy Cheddar Smoky Carrot & Roasted Onion Dips!!
SPICY CHEDDAR DIP Ingredients: 2 cups cheddar cheese, grated 2 ounces cream cheese, room temperature 1/2 cup mayo 1/4 cup sour cream 2 cloves roasted garlic (1 clove raw, minced) 1/4 teaspoon smoked paprika 1/4 teaspoon hot paprika 1/4 teaspoon 6 chili powder (can use cayenne) Instructions: 1. In a food processor, blend all ingredients until smooth. Refrigerate at least 1 hour before serving Smoky Carrot Dip Ingredients: 2 pounds of carrots, diced 4 cloves of garlic 1/2 to 3/4 cup olive oil 1/2 cup canned chick peas 3 tablespoons lemon juice 1/2 cup sliced almonds 1/2 cup fresh parsley, rough chopped 1 teaspoon salt 1/2 teaspoon black pepper 1/4 teaspoon smoked paprika 1/4 teaspoon hot paprika Instructions: 1. Preheat oven to 400 degrees. On a baking sheet, add carrots and garlic. Coat with 1 tablespoon of oil, pinch of salt and pinch of pepper. Roast for 1 hour, stirring every 15 minutes. Let cool. 2. In a food processor, add all ingredients. Blend until smooth, adding more oil if needed. Taste. Add more salt or lemon juice to your taste. Refrigerate at least one hour before serving with pita chips.
