Knife Making: Stainless Kiritsuke きりつけぼうちょう DIY
Kiritsuke, a traditional japanese multipurpose chef's knife. This is my interpretation with western style handle construction and double grind. 𝐌𝐚𝐭𝐞𝐫𝐢𝐚𝐥 Steel: 3mm thick MA5MV (aka 420C, W1.4116, X50CrMoV15). Wood: Ebony and unknown hardwood (probably some kind of hard oak) both well aged by a luthier. Blue vulcanized fiber liners, same as G10 or micarta spacers. Pins: 8mm brass tubing; 6mm brass and copper mosaic; 4mm solid brass round stock. 𝐏𝐫𝐨𝐜𝐞𝐬𝐬 0:05 3D printed pattern I made in cad 0:20 Profiling with metal cutting bandsaw 0:50 Refining profile with 2x72 belt grinder 1:20 Drilling pin holes 1:50 Grinding main bevels 2:30 Pre heat treatment hand finish up to 320 grit 2:40 Packing with steel foil to prevent decarburization 3:15 Hardening: heating to 1050°C and soaking for 15min 3:25 Plate quenching with forced air 3:50 Tempering at 230°C for 2.5hr 4:00 Cleaning scales 4:40 Hand finish up to 1200 grit sandpaper 4:50 Polishing with cotton wheel and fine polishing compound 5:30 Preparing woods with a 15° angle 6:00 Scales assembly with epoxy glue 7:00 Match drilling scales for pins 7:30 Profiling scales (had to scrap 2 set due to woodworm holes) 8:15 Finishing bolster area before glueup 9:00 Making custom mosaic pins 10:00 Glueup with epoxy. Bolster area cleaned with nitro solvent 10:45 Cut pins excess instead of grinding to prevent heat 11:00 Handle shaping with 2x72, files and sandpaper 11:50 White mineral oil 12:15 Stropping 𝐄𝐱𝐭𝐫𝐚 Pattern can be downloaded for free on my website (link below) and this knife is on sale there too.
