A pesar de hacer un pequeño descanso durante el verano, no podía dejar de compartir con vosotros esta maravillosa delicia Punschtorte - Pastel de Ponche, para ¡celebrar mi cumpleaños! Ya sabéis, los que estáis por aquí hace tiempo, que siempre es un placer para mí el hecho de poder soplar las velas con vosotros y celebrar un año más de aprendizaje, disfrute y experiencias en la vida maravillosas e increíbles. Se desconoce la autoría de esta elaboración. Podemos encontrarla bajo el nombre de Punschtorte, en su formato tarta, pero es mucho más popular el formato de pequeño pastel a modo de petit four. Estos se denominan #Punschkrapfen o #Punschkrapferl . El nombre le viene dado por la bebida del mismo nombre, Ponche, que se elabora principalmente con ron. Parece ser que, además, no existe una receta original como en el caso de otras elaboraciones. Se parte de una base que, podría considerarse "es como se debe hacer", dos capas de bizcocho fino entre las que se dispone un relleno de bizcocho remojado en ron con almíbar o mermelada de albaricoque. Estos bizcochos del relleno, podían elaborarse o bien ser restos de otras elaboraciones o bizcochos "viejos".
