Freekeh is a hidden gem of Middle Eastern cuisine. Freekeh soup with chicken is a warm, comforting and satisfying soup that can be served as a starter for guests or as a light meal. 📝 INGREDIENTS Soup: 150 g (1 cup) freekeh (cracked or whole, details in video) 1 onion small 2 garlic cloves 4 Tbsp olive oil 1 tsp salt 1/2 tsp pepper 1/4 tsp turmeric (optional) 1/4 tsp Seven Spice (optional) 1 chicken stock cube Boiling Chicken (Broth): 450 g chicken breast or whole chicken (details in video) 2 litres (8 cups) water 2 bay leaves 4 cloves 1/2 tsp peppercorns 1/2 tsp salt Garnish & Serve: Lemon for serving Chopped parsley or cilantro What is Freekeh? Freekeh is made of green durum wheat which is harvested before it’s ripened. The grains are then dried and roasted which gives them their unique roast flavor. Freekeh is used for salads, soups and as a side and makes a wonderful alternative to bulgur, couscous and rice.
