Stuffed Peppers & Potatoes in Olive Oil Ingredients: 500 g bell peppers (about 1 lb) 4 medium potatoes 2 onions, finely chopped A few green onions, finely sliced A few sprigs of fresh mint, chopped 1 cup rice 2 tomatoes, sliced 1/2 tea glass olive oil (about 60 ml) Salt Black pepper Red pepper flakes Instructions: 1. Wash and drain the rice. 2. Finely chop the onions, green onions, and fresh mint. 3. In a large bowl, mix the rice, onions, mint, olive oil, salt, black pepper, and red pepper flakes. 4. Remove the seeds from the peppers. Peel the potatoes and hollow out the centers. 5. Fill the peppers and potatoes with the rice mixture. 6. Cover each one with a slice of tomato. 7. Arrange them in a pot and add hot water until it reaches halfway up the vegetables. 8. Drizzle a little extra olive oil over the top. 9.
