Bakrid Special Authentic Mutton Yakhni Pulao Recipe Today I am sharing a simple and flavorful homemade Mutton Yakhni Pulao recipe made with aromatic whole spices, juicy soft mutton and flavorful yakhni stock. If you enjoyed this recipe then don’t forget to Like, Share and Subscribe #MuttonYakhniPulao #BakridSpecial #EidRecipes #MuttonPulao Ingredients For Mutton Yakhni 500g mutton 1 medium onion (sliced) 1½ tsp ginger garlic paste 1 tsp salt 1½ cup water Whole Spices 1 tsp coriander seeds 10–12 black peppercorns 2 cinnamon sticks 3–4 cloves 1 star anise 1 bay leaf 2 black cardamom 3–4 green cardamom 1 tsp shah jeera For Pulao Masala 2 tbsp oil 1 tsp shah jeera 3 medium onions (sliced) 1 tbsp ginger garlic paste Chopped green chillies 3 medium tomatoes (chopped) 1 tsp red chilli powder 1 tsp black pepper powder 1 tsp salt Rice Basmati rice (soaked for 30 minutes) Extra yakhni/water as needed ½ tsp garam masala Chopped coriander leaves 2–3 green chillies Method Step 1 – Prepare the Yakhni Add mutton to a cooker. Add sliced onion, ginger garlic paste, salt, coriander seeds, black pepper, cinnamon sticks, cloves, star anise, bay leaf, black cardamom, green cardamom and shah jeera. Pour water and close the cooker lid. Cook the mutton until soft and tender. Step 2 – Prepare the Pulao Base Heat oil in a pan. Add shah jeera. Add sliced onions and sauté until golden. Add ginger garlic paste and sauté well. Add chopped green chillies. Add chopped tomatoes and mix gently. Add red chilli powder, black pepper powder and salt. Cover and cook tomatoes on low flame for 5 minutes. Step 3 – Add Mutton & Yakhni Add cooked mutton to the masala. Mix gently with tomatoes. Strain the yakhni using a strainer and add only the flavorful stock. Step 4 – Cook the Rice Add soaked rice. Mix gently. Add more yakhni according to rice quantity. Add garam masala and adjust salt. Cook on high flame until rice is 90% cooked. Step 5 – Dum Cooking Lower the flame. Add chopped coriander leaves. Add 2–3 green chillies. Cover with lid and cook on dum for 10–15 minutes on low flame.
