Sugar Coated Peanuts Ingredients: 5 cups raw peanut with skin 4 cups brown sugar 1/2 cup water pinch salt In a medium skillet, add water and sugar and bring to a boil over medium-high heat, stirring constantly. Once up to a boil, continue to stir and cook over medium-high until the water evaporates and the sugar syrup seizes and crystallizes, then add the peanut. Continue stirring and the crystallized sugar will start to melt and caramelize. sprinkles with a pinch of salt (optional). Stir this to coat the peanuts until all the sugar has caramelized and no more granulated sugar remains. Remove from heat and then transfer onto a baking mat or parchment paper.
