Preheat oven to 180°C (160°C fan) / 350°F. Line a 20cm (8-inch) square baking tin. 2. Melt butter and stir in the sugar until combined. 3. Whisk in egg and vanilla until smooth. 4. Fold in the flour, baking powder, cinnamon, and salt until just mixed. 5. Gently stir through the chopped apple and toffee pieces. 6. Spread evenly into the tin, smoothing the top. 7. Bake for 25–30 minutes until golden around the edges but still slightly soft in the middle (the toffee will bubble). 8. Leave to cool in the tin — they’ll set as they cool.
