I'd seen this method used for making cakes and didn't understand why until I did some more research and found a good recipe. This is my version of Cake au citron, or French lemon cake... ...By the way: Does anyone know French? 😂 (min 07:19) 00:00 Introduction 00:24 Cake Batter 04:29 Lemon Syrup 06:12 Lemon Glaze 06:48 Decoration & Foodporn 08:10 Tasting Ingredients: Cake: 260 grams of sugar. 35 grams of lemon zest. 220 grams of eggs (4 medium). 120 grams of heavy cream (preferably thick cream or plain yogurt). 35 grams of lemon juice. 240 grams of cake flour (or all-purpose flour, without leavening agents) 8 grams of baking powder 84 grams of melted butter (warm - 32°C) Syrup: 100 grams of water 50 grams of sugar 40 grams of lemon juice Glaze: 150 grams of powdered sugar 30 grams of lemon juice (approximately 2 tablespoons) *Bake at 160°C for approximately one hour. Do not open the oven before half an hour of baking time. IMPORTANT: If using a gas oven, bake at a high temperature. If using a small electric oven, bake at 180°C.
