Actually, horse mackerel can be eaten raw, so sushi restaurants often offer sashimi made from it. Tokyo-style sushi restaurants have five special preparation methods: blanching, boiling, marinating in soy sauce, marinating with kelp, and marinating in vinegar. These aren't difficult; you just need to observe the fish's condition and determine the appropriate amount of seasoning, blanching time, and marinating time. This time, the horse mackerel was marinated with kelp. This makes its unique flavor more pronounced, resulting in a much better taste than eating it raw.
