Welcome everyone to the first EATLAC webinar in our series: The science of fermentation. “EATLAC” stands for Evaluating And Testing Lacto-fermentations Across the Country and is the name of a project led by scientists in the University of California, Davis Department of Food Science and Technology. This webinar is “What is a fermented food?” We will define fermented foods and explain the microbiology of fermented foods.
