VLOG: Weekend NINE in Lockdown | Fleur De Force

OUR MOST BORING WEEKEND YET! Ha! This weekend we just chilled as a family... NO PLANS! how was your weekend? EXPAND this little box for more info, links etc xo Smoothie Bowl: 1 Frozen Banana 3 Pieces of Frozen Mango 3 Pieces of Ice 1/4 cup of Oats 1 Tablespoon of Flax Seed 1/2 Cup of Oat Milk Toppings: Handful of cashews 2 Teaspoons of peanut butter 2 Strawberries Handful of blueberries Lemon Drizzle Muffins Ingredients: 1/2 a cup of sugar 1 cup of oat milk + 1 tsp of apple cider vinegar (leave it for a few minutes so it goes a bit curdle-y, if you don’t have ACV normal vinegar work alright too - we used white wine vinegar) 2 tsp of vanilla extract 2 cups of plain flour 1/4 cup of oil (veg, sunflower, rapeseed, coconut - any that doesn’t have a strong taste like olive oil!) 1 tsp of salt 2 tsp of baking powder Zest & Juice of 2 lemons Zest & Juice of 1 lime For the drizzle: 1/4 Cup icing sugar Juice of 1/2 Lemon (I just used the remaining I could get out of the ones I used!) Mix together the dry ingredients, then add the wet ingredients and mix (I use a food mixer for this but you can do it by hand). Spoon into muffin cases and cook for 24 mins on 200C 👍🏼 This will make 12 mini muffins like mine, or 8 full size muffins (we put less in each case so they are a better size for River to eat!) Wait for them to cool and drizzle over the icing. Let it sink in for about half an hour and ENJOY!
