Preheat the oven to 175°C (350°F). Butter and line two 23cm round cake tins (with baking paper at the bottom). 2. Curdle the milk: mix the semi-skimmed milk with the lemon juice and let it sit for 5 to 10 minutes, until it separates slightly. 3. In a large bowl, whisk together all the dry ingredients (sugar, flour, cocoa powder, baking soda, baking powder, salt). 4. Add the eggs, curdled milk, sunflower oil, and vanilla. Whisk until you have a smooth batter. 5. Pour in the hot coffee last and mix. The batter will be very liquid; this is perfectly normal—it's what gives the cake its incredibly moist crumb. 6. Divide the batter between the two tins and bake for 30 to 35 minutes: the cake is done when a toothpick inserted into the center comes out clean. 7. Let cool for 10 minutes in the pans, then unmold and let cool completely before frosting (otherwise the frosting will melt). 🍫 The Frosting 1. Beat the softened butter alone for a few minutes until it is very creamy and pale. 2. Incorporate the cocoa, then gradually add the powdered sugar (starting at low speed to avoid cloudiness). 3. Add the heavy cream, vanilla, and a pinch of salt. Beat for 2-3 minutes at a higher speed until the frosting is light and smooth. Assembly 1. If the cakes have domed, level the tops with a knife so they are flat and stable. 2. Place the first cake on top, spread a generous layer of frosting, then stack the second cake on top. 3.
