This is one of my go-to sourdough discard recipes because it’s easy, reliable, and always turns out amazing. Whether you’re looking for an easy breakfast, snack, or a way to use up sourdough starter discard, these banana muffins check all the boxes. No complicated steps, just simple ingredients and bakery-style results right at home! INGREDIENTS Melted butter (salted or unsalted) Brown sugar Eggs Sourdough starter (unfed/discard) Cinnamon Ripe bananas (brown and spotty) All-purpose flour Baking powder Baking soda Salt Chopped walnuts (optional) For the Streusel Topping: Butter Flour Brown sugar Cinnamon INSTRUCTIONS Preheat oven to 400°F. Mash bananas until smooth and set aside. In a bowl, mix all dry ingredients together. In another bowl, mix melted butter and brown sugar until smooth. Add eggs one at a time, mixing well after each. Stir in sourdough discard. Add mashed bananas and mix. Gently mix in dry ingredients (do not overmix). Fold in walnuts if using. Fill lined muffin tin evenly.
