You will need: Lightly salted herring fillet (400g) (there's a recipe for salting your own herring on the channel) 30g fresh dill 30g vegetable oil 1 onion (squeeze out excess juice) Cut the herring into skinless, boneless fillets. Grind the onion and dill in a blender, squeeze out excess juice through cheesecloth, and mix with a small amount of aromatic vegetable oil. Coat the fillets with dill and onion paste, stack the pieces on top of each other, and form them into a tight roll using cling film.
