Coat the work surface with flour and, once the potatoes have cooled slightly, press them through a potato ricer. Add the egg yolks, Parmesan cheese, salt, and flour to the potato mixture. Mix everything until a dough forms. Cut off a piece of dough, flour the work surface again, and roll the dough into a sausage shape. Cut into pieces with a knife to make gnocchi. Add salt to the water and bring to a boil. Cook the gnocchi in it. While the gnocchi are cooking, melt butter in a pan. Chop the sage and fry it in the butter – reduce the heat slightly. When the gnocchi float to the top, they're ready. Remove the gnocchi from the water and add it to the pan with the butter. Increase the heat slightly. Toss the gnocchi in the pan and grate in some more Parmesan cheese.
