Lemon Cupcakes, with Lemon curd and cream frosting ❤️ Delicious Overload ❤️

Who doesn’t love a cupcake, and these are so easy to make, look professional and taste delicious. I hope I have inspired you to get baking for family or friends, and enjoy some deliciousness. Ingredients for the batter: 6 oz SR Flour 6 oz Caster Sugar 6 oz Stork Margarine or butter of choice softened to room temperature 3 eggs 20-50 mls milk 1 tsp baking powder Pinch of salt 1 tsp vanilla essence Rondo Zest of 1 lemon. Syrup: Juice of 1 lemon 1/4 cup sugar Frosting: 1 tub of cream, I used elmlea 3 tbsp icing sugar 2 tbs cornflour 1 tsp Vanilla essence Method: Place all the batter ingredients except for the milk in a bowl and mix well till blended, I suggest using ann electric mixer for this to make life easier for yourself, add as required milk to form a loose batter. If the batter seems fine you can leave the milk out. Fill the cupcake cases up to over half way, don’t overfill or the cupcakes will rise too much. Bake in a preheated oven, 170 fan for 18-20 mins. Test either by pressing down on the sponge, if it springs back they are done. If not leave for another couple of minutes and test again. You can always use a tooth pick or skewer and if it comes out clean then the cupcakes are ready. If you use the syrup, this is the time to make it, and pour over each cupcake while they are still warm. To make the syrup, just add the lemon juice and sugar to a pan, heat till all the sugar has dissolved and that’s your syrup. I usually use a brush and just brush the syrup all over the top of the cupcakes till it all soaks in. Then leave to cool completely. Once cooled use an apple corer, or small spoon to make a hole in the centre of the cupcake for the lemon curd to sit in. Fill the holes with lemon curd, set aside and you’re ready to make the frosting. Add all the frosting ingredients to a bowl, mix with a spatula first to stop all the powder from spilling out, then whisk slowly for a minute to combine, then whisk on high till the mixture forms stiff peaks, keep your eye on it as it’s easy to overmix and then the mixture will curdle. Put the mixture in a piping bag and decorate the cupcakes in your own style. You can add adornments or just leave as is.
