Shamali - Kalo Prama Greek Cypriot Semolina Cake Recipe - No Eggs No Flour | ggmix

Shamali, samali, Σάμαλι, Καλόν Πράμα kalo prama or kalon prama, whatever you call this Greek Cypriot semolina cake soaked in syrup, we can all agree it is a 'Good Thing', just like it's name says. I don't use eggs or flour in my shamali, so this is an eggless and flourless semolina dessert because it is not meant to have the texture of a cake. it is meant to be grainy, but smooth and still hold it's shape. Coarse semolina is used because the coarse grains make it possible for the syrup to really soak through and penetrate every mm of the kalon prama. That is why my version will out shine any made with eggs or flour. My addition of tashi - tahini on the base of my semolina dessert adds another depth of flavour that takes this shamali to the next level. The sourness of Greek yoghurt and the light floral note of rose freshen up the deep flavour of tahini for a taste like no other.
