#153 - Aula 1: Curso Produção de Cerveja Sustentável - Apresentação

The Beer Production course was conceived as an Extension Project of the Higher Technology Course in Beer Production at Anhanguera University. This is a curricular requirement where university students act as a link between teaching and the application of acquired knowledge within the community. Sustainable beer production is essential to minimize environmental impact and promote a more efficient resource cycle. Inputs such as malt, yeast, water, and hops offer various possibilities for reuse, both in industry and in home brewing. Malt residue, for example, can be used as animal feed or in the production of bread and biscuits. Yeast, in addition to being reused in new fermentations, is rich in nutrients and can be applied in agriculture or the cosmetics industry. Water, fundamental in beer production, is also the focus of sustainable initiatives. In industry, reuse systems treat wastewater for non-potable uses, such as equipment cleaning, while in home breweries it is possible to reuse it for cleaning as well as in other processes such as watering plants. Hops, in turn, in addition to flavoring the beer, can be used in composting, enriching the soil for new crops. Sustainable initiatives in beer production, whether on a large scale or in an artisanal way, help reduce waste and stimulate the circular economy. These practices not only contribute to environmental preservation, but also foster a more conscious market, ensuring that the passion for beer is combined with care for the planet. The Brewing Production Technology Course at Anhanguera College is an opportunity for those who want to turn their passion for beer into a career. The course teaches everything from ingredient selection to production and marketing techniques, covering subjects such as microbiology, management, and biosecurity. Thus, students become specialists in creating recipes and analyzing the sensory quality of color, flavor, and aroma of beer.
