▶ Basbousa Ingredients 🔸 Light Syrup (Room Temperature) Using measuring cups: 1½ cups water 1¼ cups sugar By weight: 350 g water 250 g sugar Note: In the video, it was mentioned as 1½ cups of sugar, but the correct amount is 1¼ cups (250g). The syrup should be very light and at room temperature (not refrigerated). Bring it to a boil just once and turn off the heat. It should have the texture of sweet water. The basbousa must be hot when the syrup is poured over it. 🔸 For the Basbousa Batter Using measuring cups: 3 cups fine semolina 2/3 cup melted ghee or clarified butter 1/3 cup fine desiccated coconut 2/3 cup full-fat milk 1/3 cup thick syrup (see recipe below) 1¼ cups fine white sugar By weight: 500 g fine semolina 150 g melted ghee 20 g fine desiccated coconut 150 g full-fat milk 100 g thick syrup 250 g fine white sugar 🔸 Thick Syrup (used inside the batter) ½ cup sugar ¼ cup water 2 drops lemon juice Instructions: Place all ingredients in a saucepan over medium heat. Do not stir. Once it begins to boil, reduce the heat and let it simmer gently for 5 minutes.
