ASMR Black Currant Meringue Roll: Fresh From Our Garden 🍥🍇

Welcome to the official Papa Cooks channel! Today, we are making an incredibly light, airy, and delicate Meringue Roll filled with a rich mascarpone cream and a tart black currant filling made with fresh berries hand-picked right from our garden. 🍥🍇 This is the perfect summer dessert — crispy on the outside, soft as a cloud on the inside, with a perfect balance of sweetness and tart berry flavor. No talking, just relaxing ASMR baking sounds. Ingredients & Step-by-Step Recipe: 🍥 MERINGUE: 6 Egg whites (room temperature) 250g Powdered sugar 2 tsp Cornstarch 1 tsp Vanilla extract 1/4 tsp Salt 40g Almond flakes (for topping) Meringue Instructions: 1. Whisk room-temperature egg whites with a pinch of salt until frothy. 2. Gradually add powdered sugar, vanilla, and cornstarch. Beat with a mixer until stiff, glossy peaks form. 3. Spread the meringue evenly on a baking sheet lined with parchment paper. Sprinkle with almond flakes. 4. Bake at 140°C - 145°C (280°F - 290°F) for about 40-45 minutes (depending on your oven - look for a light golden crust on top). 5. Let it cool completely to room temperature. 🍇 BLACK CURRANT FILLING: 550g Fresh black currants (pitted/freshly picked) 50g - 55g Powdered sugar 2 - 2.5 tbsp Cornstarch Filling Instructions: 1. Blend the black currants until smooth, then press through a sifter to remove skins and seeds. 2. In a saucepan, mix the berry puree with powdered sugar and cornstarch. 3. Cook over medium heat, stirring constantly, until the mixture thickens. 4. Remove from heat and let it cool completely. 🥣 MASCARPONE CREAM: 270g - 290g Mascarpone cheese (cold) 150g Heavy cream 33% (cold) 2 tbsp Lemon juice 40g Powdered sugar Cream Instructions: 1. Combine cold heavy cream, mascarpone, powdered sugar, and lemon juice in a bowl. 2. Whip with a mixer until thick and uniform. Chill in the fridge. 💡 Important: Save a small portion of the cream to decorate the top of the roll later! ✨ ASSEMBLY: 1. Once the meringue is at room temperature, gently flip it onto a clean sheet of parchment paper (almond side down) and remove the baking parchment. 2. Spread the chilled mascarpone cream evenly over the meringue, then add the cooled black currant filling on top. 3. Roll it up tightly using the parchment paper to guide you. 4. Pipe the reserved cream on top of the roll. 5. Decorate as you like! We used wild strawberries, garden strawberries, and fresh mint leaves. 🍓🌱 6. Chill and stabilize in the fridge for about 2 hours (but you can slice it sooner if you really can't wait! 😉). Enjoy this beautiful dessert!
