In today's video, I'm making a delicious and aromatic Hyderabadi Chicken Biryani Recipe. The chicken is soft and juicy, while each grain of basmati rice is long, fluffy, and distinct. Crispy biryani, mint, saffron milk, cashews, ghee, and kewra water give this homemade biryani a true restaurant-style flavor and aroma. Ingredients For Chicken Marination: • Chicken – 1 kg • Kashmiri red chili powder – 1 tablespoon • Coriander powder – as needed • Turmeric powder – as needed • Garam masala powder – as needed • Cumin powder – as needed • Hyderabadi biryani masala – as needed • Ginger-garlic paste – as needed • Green chilies – 2 • Fresh coriander leaves • Fresh mint leaves • Curd – 2 bowls • Salt – 1 tablespoon or to taste • Ghee – a little • Crispy Biristas For Biristas: • Thinly sliced onions • Oil for frying For Rice: • Long-grain basmati rice – 500 grams • Water – about 1 to 1.5 liters • Bay Bay leaf • Cinnamon • Green cardamom • Star anise – 1 (optional) • Cloves • Black pepper • Ghee – a little For Layering: • Chicken gravy • 80% cooked basmati rice • Crispy Birista • Fresh coriander leaves • Fresh mint leaves • Warm saffron milk • Cashews • Hyderabadi biryani masala • Kewra water • Ghee Short Step-by-Step Recipe Make the Birista: Fry thinly sliced onions until golden brown and crispy. Marinate the chicken: Mix 1 kg of chicken with red chili, turmeric, coriander powder, cumin powder, garam masala, biryani masala, ginger-garlic paste, yogurt, green chilies, coriander, mint, salt, ghee, and birista and let it sit for 1 hour. Cook the chicken: Cover the marinated chicken and cook over medium-low heat for 20–30 minutes, until the chicken is tender and the oil begins to separate from the gravy. Cook the rice: Soak 500 grams of soaked basmati rice in boiling water containing bay leaves, cinnamon, cardamom, cloves, star anise, black pepper, and ghee until 80% cooked and drained. Layering: Layer the birista, coriander, mint, saffron milk, and rice on top of the chicken gravy. Repeat this process. Dump: Top with cashews, birista, saffron milk, biryani masala, kewra water, and ghee. Cover and simmer over low heat. Serve hot Hyderabadi Chicken Biryani with raita and onions.
