Hutzelsuppe aus dem Hessenpark

Hutzelsuppe, also called "Schnitz und Schnitz," consists primarily of dried pear slices, which are traditionally used to make Hutzelklöße (dumplings), Hutzelbrot (bread), or Hutzelsuppe (soup). "Hoddseln" generally refers to dried fruit, including pears, apples, plums, or apricots. This sweet, sour, and salty dish from northern Hesse is usually served with homemade sausage such as blood sausage, liver sausage, or Dürre Runden (a type of dry sausage).
